Slaw of Champions

We proudly present Happy Slaw! This is our favourite easy-peasy fridge filler, perfect for loading up with some protein for your lunch box or dinner! Full of fibre with zingy, lemony hit, we love to add nigella seeds as well for all round goodness
1 red cabbage
Small bunch coriander/cilantro (unless you’re part of the anti-coriander/cilantro brigade)
1 tbsp honey
3 tbsp extra virgin olive oil
1 tbsp nigella seeds
Salt and pepper to taste (1-2 Spring onions/scallions - if you fancy it!)
Take a largish bowl, or whatever Tupperware you’re going to use to store it. Squeeze the lemon and mix with honey, oil and salt and pepper. Voila, here’s your dressing!
Grate the cabbage and carrots with a food processor. Chop your spring onions and coriander/cilantro.
Add the contents of the processor to your bowl/tub with the dressing already in it. Do in batches if necessary. Add in the chopped goods too.
Mix up! DONE
Minimal washing #win! This keeps well too in the fridge, and if we get bored of it by the end of the week, we sauté whatever’s left with some onions and garlic. Result!
